Cedar arrives first, dry and clean, and behind it a dark sweetness that reads as cherry and dried fig rather than sugar. Raisin and warm caramel fill the middle third, with just enough black pepper underneath to keep the sweetness honest. The years of rest are audible in how quietly they burn, no rough edges, no heat in the draw. Moving up through the set the ring gauge grows and the body thickens with it, so we smoke them in order, smallest to largest, across one long evening.
